The problem for me really is just that my IBS doesn’t tolerate the xanthan, guar, flax, chia, and psyllium gels that are commonly used. It takes making your own custom baking blends and trial and error. It just isn’t a one-to-one substitute deal. ![]() The mucilaginous quality of greek yogurt, sour cream, or even mayonnaise can also really help. Use of extra of egg can really help with rise and moisture retention but often a vegetable or fruit puree is needed to help with moisture retention unless you use a hydroscopic syrupy sweetener like molasses, honey, or golden syrup. Starch gels and gums don’t function exactly like gluten protein. One thing to know is that GF baking blend isn’t really ever one to one with wheat flour. Through trial and error I came up with a microwave version of steamed Boston Brown Bread but adapted to be more of a sandwich bread Lazy Bread. I don’t tolerate the xanthan and guar or flax used to elasticize doughs for a slow rise. I used to love baking rustic wheat and rye breads but yeast-bread has lost its magic for me since I got diagnosed with celiac disease (BTW I don’t mind “celiac’s” but it sets off a lot of people with celiac disease for some reason). ![]()
